Chocolate Fudge Cookies (vegan)

These last days my chocolate cravings are alarmingly present. Although my hunger for the main meals is quite low, I could just live on ice cream, chocolate and bananas. Since I don’t want to gain tons of weight before summer, I might as well indulge in a healthy-ish way.

Luckily, I discovered a wonderful recipe on one of my favourite vegan blogs: http://ohsheglows.com/. If you like vegan food but don’t know this blog, you should definitely have a look at the delicious recipes Angela creates.

So, to satisfy my unusual sugar appetite I decided to try out her chocolate fudge cookies. I didn’t use all of the ingredients listed on her blog and my methodology and technique are lightly different too.

What I used:

  • 4 tablespoons of coconut oil
  • 4 tablespoons of sunflower seed butter
  • 1/4 cup of raw cacao powder
  • 1/4 agave syrup (instead of maple syrup)
  • 7 tablespoons of oats
  • 6 tablespoons of shredded coconut
  • 2 tablespoons of chia seeds
  • a pinch of salt

How I prepared the cookies:

I melted the coconut oil on medium heat. After the oil was liquid, I added the sunflower seed butter, the cacao powder, the agave syrup and whisked it. When the mixture became dense and chocolate-like, I removed the pot from the heat. Then I added the oats, shredded coconut, chia seeds as well as the pinch of salt. I used a spoon to stir the chocolate liquid with the rest of the ingredients until everything was nicely combined.

I then relied on my good, old hands to form little cookies out of the mixture and placed them on a plate. Be careful that the mixture has cooled down until you touch it. After that, I placed the cookies into the fridge and let the chocolate cool down.

Even though you can play around with your choice of syrup or even with your choice of oats, the chia seeds are essential to make the mixture stick together (as I noticed the second time I tried this recipe 😑).

And there you go, almost guilt-free chocolate fudge cookies. I prepared mine for a potluck for uni; they’re equally great to bring to a pick-nick or as a late-night snack with your favourite TV show. You’re welcome!
